For the rolls:
- 1 teaspoons dry active yeast
- 2 tablespoons (30 mL) barely warm water
- 2 tablespoons (30 g) granulated sugar
- Zest of 2 lemons (about 1-2 tablespoons)
- ½ teaspoon salt
- 3 tablespoons (45 g) butter, melted
- 1 large egg
- ¼ cup (60 g) sour cream
- 1½ cups (190 g) bread flour (all purpose will work)
For the Poppy Seed Filling:
- 6 ounces (170 g) canned poppy seed filling
- ¼ cup (50 g) brown sugar, packed
- Zest and juice of 1 lemon
- Honey, for drizzling
- Cooking time - 55 min.

How to make Poppy Seed Rolls?

For the rolls:
1. Melt the butter over low heat and set it aside to cool slightly.
2. In another bowl, dissolve dry yeast in warm water and let it stand for 5 minutes until it froths well.
3. Once the yeast has frothed, add sugar, lemon zest, salt, eggs, cream, and melted butter. Mix well until the ingredients are thoroughly combined.
4. Gradually incorporate the flour into the mixture and mix well, kneading the dough until it becomes smooth.
5. After kneading the dough into a smooth consistency, place it in a larger bowl greased with butter and let it rise in a warm place until the dough doubles in size. After 1 hour, take the dough out of the bowl, knead it again, and let it rest for an additional 30 minutes.
For the filling :
1. While the yeast dough for the pastries is rising, let’s prepare the fragrant poppy seed filling. Mix poppy seed with brown sugar, lemon zest, and lemon juice.
2. After the yeast dough for the pastries has risen for the second time, gently roll out the dough into a rectangle.
3. Take the prepared Poppy Seed filling and evenly distribute it over the dough. Carefully roll the dough into a log and press the edges tightly. To firm up the dough, tightly wrap it in plastic wrap and place it in the refrigerator for 30 minutes. This chilling period will help the dough hold its shape and make it easier to cut into rolls.
4. After the dough has chilled, remove the plastic wrap and cut it into rolls about 5 cm thick.
5. Arrange the evenly spaced dough rolls in a baking dish lined with parchment paper and let them rest for 40 minutes to allow the dough to soften and rise.
6. Preheat the oven to 180 °C.
7. Place the Poppy Seed Roll in the preheated oven and bake for 15-20 minutes until they reach a golden color.
8. After the yeast poppy seed rolls are baked, put liquid honey (depending on taste) on the still hot buns.
