For the Buttercreams:

How to make Neapolitan cake?

For the Strawberry Reduction:

1. Place strawberries without the stems and lemon juice in a saucepan over medium heat.

2. Once the mixture has heated for a few minutes, use a masher to crush the strawberries, and let it simmer for approximately 10 minutes.

3. Pour the mixture through a strainer into a bowl, ensuring to separate any solids. Cover the bowl and refrigerate for an additional 10-15 minutes until chilled.

For the Neapolitan cake:

1. In a large bowl, combine the dry ingredients by sifting them together.

2. Combine the wet ingredients in a medium-sized bowl and mix them together.

3. Pour the wet ingredients into the bowl with the dry ingredients and mix them together until they are just combined.

4. Take the mixture and separate it evenly into three separate bowls.

5. Take one of the bowls of mixture and add cocoa powder to it. Mix thoroughly until well incorporated.

6. Pour 3/4 of the strawberry reduction into the second bowl of mixture and mix well until evenly combined.

7. Divide the three batters evenly into three 6″ cake pans that have been greased and floured.

8. Bake at 350 degrees F for approximately 30 minutes, or until the centers are firm and spring back when lightly touched. Allow the strawberry layer to bake for an additional 5-8 minutes. Check for doneness by inserting a toothpick into the center.

For the Buttercreams:

1. Beat the butter using a paddle attachment in a stand-up mixer for approximately 5 minutes.

2. Gradually incorporate the confectioner’s sugar while beating.

3. Pour in the cream and vanilla, then continue beating until a smooth and fluffy consistency is achieved.

4. Divide the buttercream into three equal parts.

5. Transfer one portion of the vanilla buttercream to a piping bag and cut off the tip.

For the Chocolate Buttercream:

1. Incorporate cocoa powder into one portion of the buttercream and mix well.

2. Transfer the mixture to a piping bag and cut off the tip for easy piping.

For the Strawberry Buttercream:

1. Incorporate the remaining strawberry mixture into a batch of buttercream.

2. If desired, enhance the color by adding a few drops of pink food coloring.

3. Blend the ingredients until you achieve the desired consistency.

4. Transfer the mixture into a piping bag and cut off the tip for easy piping.

For the Assembly:

1. Pipe alternating circles between each layer using the different buttercream bags.

2. Add layers

3. Pipe the buttercream onto the cake and use an offset spatula to smooth out a crumb coat on the outside.

4. Using a piping bag, create petals around the entire cake, ensuring consistency in the size of each petal.

Notes:

  • Please note that the cake layers may require different baking times. In my experience, the strawberry layer needed about 10 minutes longer than the vanilla layer. Make sure to closely monitor the cakes and ensure that the centers are set before removing them from the oven.

  • For the strawberry buttercream, feel free to adjust the amount of preserves to your liking. You can also use the liquid from defrosted frozen strawberries for added flavor.

  • If you are planning to create a petal design with a crumb coat, be aware that it will require a generous amount of buttercream. However, if you prefer a simpler design, you can halve the quantity of buttercream needed.
