1. Prepare the batter. Heat the milk and the butter in a saucepan. Let the butter melt, and keep watching not to let the mixture boil.

2. While the milk-butter is on the heat, sieve the flour into a separate bowl.

3. Pour the sugar and the salt into the flour, mix it.

4. Add the eggs and the yolks into the flour, sugar, and salt mixture you combined earlier. Stir it until you get a smooth mass.

5. Add vanilla extract to the heated milk-butter mixture and remove it from the stove to cool down

6. Pour the milk mixture into the flour and egg mixture slowly, and stir in between not to cook the egg yolk.

7. Place the batter in a fridge for 1–12 hours after covering the bowl with a stretch film or transferring the mass into an airtight container.

8. Prepare the molds by greasing them with melted butter. If you are using silicone molds, place them in a fridge for 30 mins after greasing so that the butter sticks to the mold walls.
Tip: put the silicone molds onto the baking rack before the greasing.

9. Fill in the molds. Pour the batter into the molds, fill 3/4 of each cup.

10. Preheat the oven to 500ºF (260ºC) and bake for 10–15 mins.

11. Reduce the temperature to 360ºF (180ºC) and bake for another 1 hour until the crust seems caramelized enough.
Take out the Canelés from the oven, remove the molds while the Canelés are still hot. Serve cooled.
