For Macaron Shells:
- 1 cup (100 g) almond flour
- 1 cup (100 g) confectioners' sugar
- 2 tablespoons (36 g) egg whites
- ½ cup (100 g) granulated sugar
- 2 tablespoons (25 g) water
- 2 tablespoons (37 g) egg whites
- Food coloring: Wilton Leaf Green + Golden Yellow
For Apple Filling:
- 1 Granny Smith apple, peeled and cored
- 2 tablespoons (25 g) granulated sugar
- Juice of ½ lemon
- ½ teaspoon (3 g) pectin NH
- 2 teaspoons (10 g) granulated sugar
For Buttercream:
- 1 tablespoon (15 g) water
- 3 tablespoons (50 g) granulated sugar
- 1 large (40 g) egg whites
- 1 teaspoon (5 g) granulated sugar
- ½ cup (100 g) unsalted butter, room temperature

Prepare the Macaron Shells:
1. Preheat the oven to 285°F (140°C). Line two baking sheets with parchment paper.
2. Sift the almond flour and confectioners’ sugar into a bowl. Add 36 g (1.3 oz) of egg whites and mix into a smooth paste. Add food coloring until desired shade is achieved.
Italian Meringue:
3. Combine 25 g (0.9 oz) water and 100 g (3.5 oz) sugar in a saucepan. Heat over medium until it reaches 244°F (118°C). Avoid stirring once it begins boiling.
4. While the syrup cooks, whip the 37 g (1.3 oz) egg whites in a stand mixer until foamy. Slowly pour the hot syrup into the egg whites with the mixer on medium speed. Whip until the meringue is thick, glossy, and completely cool.
Combine and Pipe:
5. Fold half of the meringue into the almond paste until combined. Add the remaining meringue and fold until the batter flows like lava. Check consistency by drawing a figure 8 with the batter; it should take about 20 seconds to settle.
6. Pipe rounds approximately 1.5 inches (4 cm) in diameter onto the prepared baking sheets, spacing them about 1 inch apart. Tap the trays to release air bubbles, popping any with a toothpick. Allow the shells to rest for 15-20 minutes until a skin forms.
7. Bake for 10 minutes at 285°F (140°C), then lower to 230°F (110°C) and bake for 8 more minutes. Let the shells cool completely on the baking sheets before removing.
Prepare Apple Filling:
8. Dice the apple into ¼-inch (5 mm) cubes. Simmer the apple, 25 g (0.9 oz) sugar, and lemon juice for about 10 minutes until translucent. Combine pectin with 10 g (0.35 oz) sugar, then stir it into the apple mixture. Let cool.
Make Buttercream:
9. Heat 15 g (0.5 oz) water and 48 g (1.7 oz) sugar to 244°F (118°C). Simultaneously, beat the egg whites with 5 g (0.2 oz) sugar until foamy. Slowly pour the hot syrup into the whites, whipping until cool.
10. Gradually add softened butter, one piece at a time, beating until the buttercream is smooth.
11. Pipe a ring of buttercream onto one shell, fill the center with apple filling, and top with another shell. Repeat for all macarons.
Storage:
1. Store macarons in an airtight container in the refrigerator for 1-2 days to allow flavors to mature. Serve at room temperature.
