1. Place the gelatin in a small bowl and pour boiling water over it. Let it swell for about 10 minutes.

2. In a medium saucepan, combine the heavy cream, coconut cream, and sugar.

3. Heat the mixture over medium heat, stirring constantly, but do not let it boil. Continue until the sugar dissolves.

4. Add the swollen gelatin to the mixture and stir until fully dissolved.

5. Remove from heat and allow to cool to room temperature.

6. Pour the panna cotta mixture into molds or glasses (5 fl oz capacity each). Refrigerate for 5–6 hours.

8. To unmold, dip the molds in hot water for 30 seconds and turn the panna cotta onto a plate.
