- 2 cups Friendly Farms Sour Cream 480ml (room temperature)
- 3/4 cup (180ml) SimplyNature Organic Wildflower Honey
- ¼ cup (60ml) Specially Selected 100% Pure Maple Syrup
- 1/2 cup (120ml) SimplyNature Organic Coconut Oil, melted and cooled
- 4 Goldhen Cage Free Large Eggs
- 2 tsp Stonemill Pure Vanilla Extract
- 1 tbsp vanilla bean paste
- 1 tbsp lemon zest
Berries:
- 2 cups strawberries (16oz, chopped, reserve 5 for top)
- 2 cups blackberries (16oz, reserve 5 for top)
- 2 cups blueberries (16oz)
For the Frosting:
- 18 oz mascarpone cheese 540ml (room temperature)
- 3 cups Countryside Creamery Heavy Whipping Cream (720ml)
- 1 cup Baker's Corner Confectioner's Sugar (145g)
- 3 tbsp Stonemill Pure Vanilla Extract

How to make berry cake?
For the berry cake:
1. To begin, preheat your oven to 350°F (175°C). Grease and flour three 8-inch (20cm) cake pans and consider using damp cake strips for even baking.
2. Start by zesting a lemon and keeping the zest aside. Next, melt the coconut oil and allow it to cool before setting it aside. In a small bowl, combine maple syrup and honey, then heat the mixture in the microwave for a few seconds.
3. Begin by sifting or lightening the flour. In a large bowl, sift together the remaining dry ingredients and whisk them together. Give the sifted mixture a thorough whisk to ensure the elimination of any lumps.
4. In a medium bowl, combine the wet ingredients and mix thoroughly, ensuring that the honey mixture is evenly distributed.
5. Pour the wet ingredients into the dry mixture and thoroughly mix until well combined. Incorporate the lemon zest into the batter.
6. Evenly divide and pour the batter into the prepared cake pans. For precise measurements, you may consider using a kitchen scale.
7. Bake the cakes for approximately 35 minutes or until the centers are fully cooked.
For the Frosting:
1. Place the cream and confectioner’s sugar in a stand mixer equipped with a whisk attachment.
2. Whisk the cream until it begins to thicken slightly.
3. Incorporate the mascarpone into the whipped cream by gradually increasing the mixer speed from low to high. Add the vanilla extract during this process.
4. Continue beating the mixture until it reaches a firm peak consistency. Avoid overbeating, as it may result in a grainy texture.
For the Assembly:
1. Spread a layer of the filling onto the first cake layer, then top it with a generous amount of berries. Add another layer of cream and gently smooth it out. Place the second cake layer on top and repeat the previous steps, adding the filling and berries. Finally, add the third cake layer, cover it with frosting, and carefully smooth it out for a finished look.
2. Gently press the berries into the filling along the sides of the cake, ensuring they are evenly distributed. Use an offset spatula to carefully smooth out the filling for a clean and polished appearance.
3. Remove the hulls from the strawberries.
4. Using a large star tip, pipe dollops of cream along the top edge. Place blackberries and strawberries on each dollop as a garnish.

If you are unable to find Mascarpone cheese, don’t worry! In case you run into this situation, here’s a handy alternative suggested by Nigella. Simply combine the following ingredients until well blended. Remember to bring them all to room temperature before mixing. While it may not be an exact match for Mascarpone, it works as a suitable substitute in a pinch!
