1. In a bowl, whisk together egg whites, sugar, and salt.

3. Transfer the bowl to a stand mixer and whisk with the attachment until you get glossy peaks at room temperature.

4. Switch to a paddle attachment and, while running on low, add room temperature butter tablespoon by tablespoon, making sure to let each piece incorporate before adding the next. Once all the butter is added, mix in vanilla extract.

5. Drizzle in cooled and melted chocolate while running the mixer on low. Scrape the bowl and mix again. The frosting is now ready to transfer to a piping bag or a ziplock bag for freezer storage.

For the Assembly:

1. To decorate the cooled cupcakes, utilize a large star tip to pipe a swirl of buttercream onto them. Start at the center, squeezing and lifting the tip while rotating the cupcake back and forth. For a lovely tip to the dollop, continue to lift while stopping the squeezing of the piping bag.
