- ½ cup (100 g) granulated sugar
- 1 cup (100 g) almond flour
- ⅔ cup (75 g) powdered sugar
- 2 tbsp (14 g) cocoa powder
- ⅔ cup (75 g) powdered sugar
- 2 tbsp (14 g) cocoa powder
For Nutella Buttercream:
- 4 tbsp, 2 oz (56 g) unsalted butter (room temperature)
- ⅓ cup Nutella
- 2 cups, 9 oz (255 g) powdered sugar
- ⅛ tsp salt
- 2–4 tbsp milk, as needed
- ⅛ tsp salt

For Topping:
- ¼ cup chocolate chips
- ¼ cup chopped hazelnuts
- ¼ cup chopped hazelnuts

Macaron Shells:
1. Preparation: Line two baking sheets with parchment or silicone mats. Prepare a piping bag fitted with a round tip.
2. Dry Ingredients: Sift powdered sugar, almond flour, and cocoa powder together. Set aside.
3. Meringue: Place egg whites and granulated sugar in a heatproof bowl over simmering water. Whisk until sugar dissolves completely, then transfer to a mixer and whip to stiff peaks.
4. Folding: Add the dry mixture to the stiff meringue and fold gently until the batter reaches a glossy, flowing consistency (use the figure-8 test).
5. Piping: Transfer batter to a piping bag and pipe 1-inch (2.5 cm) circles onto the prepared sheets. Tap the trays to release air bubbles, use a toothpick to pop any visible bubbles, and let dry for 20–40 minutes until a skin forms on the surface.
6. Baking: Preheat the oven to 300°F (150°C). Bake one tray at a time for 18–20 minutes, rotating after 5 minutes. Let shells cool completely.
Nutella Buttercream:
1. Creaming: Beat butter until fluffy. Add Nutella, powdered sugar, and salt, mixing on low until combined.
2. Consistency: Gradually add milk as needed to achieve a creamy texture.
Assembly:
1. Pipe buttercream onto half of the shells and sandwich with the remaining shells.
2. Melt chocolate, drizzle over the macarons, and sprinkle chopped hazelnuts on top.
Storage:
1. Store in the fridge for up to 1 week or freeze for up to 2 months in an airtight container.
2. Allow macarons to come to room temperature before serving.
