Ingredients
For Coconut Macaron Shells:
- 1½ cups (150 g) ground almonds
- 1¼ cups (150 g) powdered sugar
- 2 tbsp (10 g) unsweetened shredded coconut
- 2 egg whites, divided (55 g each)
- White food coloring powder
- Pinch of salt
- ¾ cup (150 g) granulated sugar
- 2½ tbsp (38 ml) water

For White Chocolate Coconut Filling:
- 9 oz (250 g) white chocolate
- ½ cup (120 g) whipping cream
- 2 tsp (10 ml) coconut extract
- White food coloring

For Caramelized Coconut for Filling:
- ½ cup (35 g) unsweetened shredded coconut
- 2 tbsp (30 g) sugar
- 1 tbsp (15 ml) water
- 1 tbsp (15 ml) water

Caramelized Coconut:
1. Combine sugar and water in a frying pan over medium heat until dissolved.
2. Add shredded coconut, stirring continuously for 5 minutes until golden.
3. Transfer to a bowl and let cool.
White Chocolate Coconut Filling:
1. Melt white chocolate and cream over a bain-marie.
2. Stir in coconut extract, white food coloring (optional), and caramelized coconut.
3. Cool to room temperature before using.
Macaron Shells:
1. Preheat the oven to 285-300°F (140-150°C) and prepare baking sheets with parchment paper.
2. Grind powdered sugar, almond flour, and shredded coconut into a fine powder, then sift into a bowl.
3. Mix 55 g egg whites with white food coloring and combine with the almond mixture to form a paste.
4. Whip the other 55 g egg whites with salt until foamy. Prepare a sugar syrup by boiling granulated sugar and water until 244°F (118°C). Slowly pour the syrup into the whipped whites, beating until stiff and glossy.
5. Fold the meringue into the almond paste until the batter flows in thick ribbons.
Piping and Baking:
1. Pipe 1-inch (2.5 cm) circles on prepared sheets, spaced 1 inch (2 cm) apart.
2. Rap sheets on the counter to remove air bubbles.
3. Let shells sit for 15 minutes to dry, then bake for 20-24 minutes. Cool before removing.
Assembling Macarons:
1. Pipe filling onto one shell, sandwich with another, and refrigerate for at least one day to meld flavors.
2. Serve at room temperature and enjoy!
