Cheesecake Crust:

1. Prepare a round 9-inch (24 cm) springform pan by lining it with parchment paper.

2. Preheat the oven to 280°F (140°C).

3. Melt the butter over low heat.

4. Grind the almonds with the chocolate graham crackers using a food processor. Add the resulting crumbs to the beaten butter and mix well.

5. Line the bottom of the baking dish with the prepared mixture. Press firmly. Place in the refrigerator for 10 minutes.

Chocolate Cheesecake:

1. Melt the dark chocolate together with the cream over low heat, stirring constantly. Stir in the brandy and remove from the stove, cool slightly (so it’s not hot).

2. Put the cream cheese in a bowl, beat the eggs, add the powdered sugar, and mix everything with a spoon until it is smooth and uniform.

3. Mix the cornstarch and the cooled chocolate mixture into the mixture.

4. The chocolate cheesecake will be baked in a water bath. Remove the chilled cake base from the refrigerator and wrap the baking dish in aluminum foil to protect it from water. Place the mold in a larger container filled with warm water, then pour the prepared cheese mixture onto the base.

5. Place the cheesecake in the preheated oven and bake for about 1 hour.

6. Once the chocolate cheesecake is baked, take your time to remove it from the oven. Then, turn off the oven and let the cheesecake cool down to room temperature.

7. Place in the refrigerator for 8 hours.
