For the White Chocolate Ganache:

How to make Chocolate Beet Cake?

For the Cake:

1. Preheat the oven to 350°F. Grease and flour three six-inch cake pans. In a large bowl, sift together the dry ingredients, including the sugar. Whisk the dry mixture until well combined and set it aside.

2. In a medium bowl, combine the wet ingredients and whisk them together until well blended.

3. Pour the wet ingredients into the bowl with the dry ingredients and mix them together until just combined. Divide the resulting mixture evenly among the three 6-inch cake pans that have been prepared with butter and flour. For even baking, you can also use wet cake strips around the pans. Place the pans in the preheated oven and bake at 350°F for approximately 30 minutes, or until the centers of the cakes are springy to the touch.

For the Buttercream:

1. Gently melt the white chocolate and cream together over low heat, then set it aside. I prefer to warm the cream and pour it onto the white chocolate. Allow it to sit for a minute, then whisk until smooth.

2. In a separate bowl, beat the butter until it becomes light and fluffy. Gradually add the sugar, one cup at a time, and beat well after each addition. Add a pinch of salt and the vanilla extract to the mixture.

3. Drizzle the melted white chocolate into the buttercream and continue beating until well combined.

4. Divide the buttercream into four equal batches. Take three of the batches and add blue food coloring to each one, creating different shades to achieve the desired ombre effect.

For the Optional Ganache:

1. To melt the white chocolate and cream, you can use low heat on the stovetop or opt for the microwave method. If using the microwave, heat the mixture in 20-second bursts at 50% power, stirring in between until fully melted and smooth. Once melted, stir in the desired food coloring to achieve the desired color for your ombre effect. Transfer the mixture to a piping bag for easy application and decorating.

For the Assembly:

1. Place a round cardboard onto the bottom of one cake layer. Using a piping bag, pipe the desired buttercream onto the first layer of the cooled cake. To create an ombre effect, you can choose different shades or colors. Add the second layer on top and repeat the process until the cake is fully stacked. Apply a thin layer of buttercream on the entire cake and smooth it out. Chill the cake to allow the buttercream to set.

2. For the final layer of buttercream, use a piping bag to create an ombre effect starting with the darkest blue shade at the bottom and gradually transitioning to an uncolored shade on top. Smooth the buttercream layer and chill the cake once again.

3. Place a parchment round on top of the cake. Prepare a clean surface with a gradient of blue sanding sugars and gently roll the chilled cake over the sugars to create a decorative effect. Transfer the cake to a cake stand.

4. Using a large round tip, pipe dollops of buttercream onto a square of parchment paper. Place the parchment paper with the dollops in the freezer to chill and set. Once firm, mount the chilled dollops onto toothpicks and roll them in a small gradient of sanding sugar.

5. Arrange the dollops onto the cake and sprinkle them with white sanding sugar for added decoration. If you plan to add a ganache drip, place the dollops on the cake after the ganache has fully set.

Some helpful tips to keep in mind while making this recipe:

  • Be cautious when melting the white chocolate as it burns easily. Use low heat and go slow.

  • If you’re using pans of different sizes, adjust the recipe accordingly. Double it for 8-inch pans and triple it for 9-inch pans.

  • Don’t worry if you see small clumps of butter in the wet ingredients mixture. It will all come together once you add the dry ingredients. You can also use melted butter and slightly warmed milk and sour cream, if desired.

  • You can substitute sour cream with whole milk yogurt if you prefer. The difference in taste is barely noticeable.

  • Short on time? You can skip making the ombre buttercream and let the sanding sugar do most of the work in terms of presentation.
